German Potato Salad

Ingredients
6-8 LARGE Russet or Red Potatoes, boiled, peeled and chopped into 1" cubes2 med apples, diced1 med red onion, finely diced6 Claussen Pickle Halves, dicedDressing:2/3 cup each EV olive oil and Bragg's apple cider vinegar1/4 c. white or brown sugar (I use Organic Sugar)1 t. salt1-11/2 t black pepper
Directions
Boil and cool the potatoes till cool enough to handle. Peel and cube them and place in a large bowl, add the diced onion, pickle and apple.

In a measuring cup, combine the oil, vinegar sugar, salt and pepper. Pour over the potato mixture and toss lightly.

Makes 16 large servings.

Excellent with ham (if you eat meat) for Easter, and hard-boiled eggs. Bring to a pot-luck picnic too!
