Introduction
In the early '70's my friend Sue introduced me to her Stuffed Cabbage Rolls. I loved them, but not enjoying anything more than chopping stuff and throwing in a pot, I've only made them two or three times. I've been craving them lately so I thought I'd try turning her recipe into a soup. It is packed with taste and nutrients, low in calories and cost and is very filling! Ingredients

1 large green cabbage, coarsly chopped
1 lb 99% lean ground turkey breast
1 medium onion, chopped
1 cup uncooked brown rice
2 6oz cans tomato paste
2 1lb cans sauerkraut with liquid
6 cups water (less or more as needed)
1 tbsp paprika
3 bay leaves
Sour Cream for topping
Tips
We like ours topped with fat free sour cream (not included in nutritional info since serving size varies by individual taste).
Nutritional value is based on 2-cup serving.
Directions
Cook onions and ground turkey in a 6qt pot.
Add cabbage, sauerkraut, and water and let the cabbage cook down a little
Stir in tomato paste, paprika and bay leaves.
Add rice.
Cook until cabbage and rice are done, or simmer longer for added flavor.
Serving Size: Makes 6 qts or 12 2-cup servings
