    0.25 cups butter
    2 small onions, diced
    1 garlic clove, minced
    2 turnip roots, diced
    2 cups potatoes, diced
    4 cups vegetable broth
    7 oz whipping cream (half and half)


Melt butter in a large saucepan. Add onions and garlic and sautee lightly. Add the turnip roots and the potatoes. Pour in the vegetable broth and bring to a boil. Simmer on medium heat for about 15 minutes till turnip roots become soft. Blend soup in blender and pour back into saucepan. Then stir in the cream. Add salt and pepper.

Serving Size: makes 6-8 servings

    sodium content can be reduced by using non salted butter, low salt broth, and substituting Mrs. Dash for salt at the end - 3/7/21
