Meatballs

Ingredients

3 lb lean ground beef1/2 cup walnuts (measure chopped walnuts, then grind them)1/4 cup whole flax seed (grind this too)1 sleeve club crackers (crushed or ground, 44 crackers)2 T ketchup2 T bbq sauce (I use raspberry flavored)2 T worcestershire sauce2 medium eggs
Grind or crush everything that needs ground or crushed (crackers, flax seed, walnuts)
In a large bowl (you need to stir so make sure it's really big!) combine ground beef, walnuts, flax seed, crackers, ketchup, bbq sauce, worcestershire sauce, and 2 medium eggs.
(if you use large eggs the mix will be too wet, if you absolutely must use large eggs, only use one egg and add 1-3 T of ketchup if it is not sticky enough to soak up all the crumbs)
Roll them into balls, about a tablespoon and a half in size, maybe a little smaller. You will end up with 82 meatballs if you make them all uniform in size.
Put them on a cookie sheet lined with foil and very lightly sprayed with non-stick spray. They can be pretty close together because they shrink a little when they cook.
Bake at 375 for 20-25 minutes, until done.
Voila, meatballs!
A serving is two meatballs.
(I always eat more than two!)
