Rolo Cookies

1 cup butter1 ¼ sugar1 cup brown sugar2 eggs2 teaspoons vanilla extract¾ cup coco2 ¼ cup flour1 teaspoon baking soda48 Rolo’s (most of a 12 oz package)
In a large bowl mix butter, 1 cup of sugar, brown sugar, eggs, and vanilla.
In medium bowl mix flour, coco, and baking soda.
Add to butter mixture.
Roll 1 tablespoon cookie dough into a ball; flatten into palm of your hand.
Place 1 Rolo in the center; bring sides together and roll into ball.
Roll ball in the remaining ¼ white sugar.
Bake at 375˚ for 9-10 minutes.

These are really good! I've been making them for a few years and am pleasantly surprised with the calorie count. I have also made them using Mini Rolos, and end up with about 8 dozen cookies that size. I cut down the sugar by 1/4 cup each white and brown, as I find them a bit too sweet otherwise. - 2/12/14
