Directions
This recipe is very easy. Basically, you cut all of the ingredients up into small bite sized pieces. Throw the whole thing in the slow-cooker on high, and it is done. Season to taste. If it is looking dry you can add some vegetable stock or water. Also, I add som low-fat parmesan cheese towards the end.

This dish is great because it can be served cold or hot with anything. I make a pot on Sunday and eat it through the week.
