Introduction

Ingredients

    24 oz. nonfat cottage cheese
    2 pieces of Morningstar Farms "bacon" cooked until crisp & crumbled.
    1 c. chopped onion
    10 package fresh spinach, slightly chopped
    mushrooms, chopped, if desired
    8 oz colby or cheddar cheese, shredded
    3 eggs + 1/2 cup eggbeaters
    seasoned salt
    1/2 c. flour

Directions

Servings: 9
Spray a 9x13 glass pan with oil.
Preheat oven to 350

Saute onion until translucent, add spinach near the end and cook until wilted. (If using mushrooms, add with spinach)
Whisk eggs, stir in eggbeaters, cottage cheese, flour, and cheese. Add spinach/onion mixture.
Pour in pan and bake 1 hour or until done. Let sit in pan a few minutes to set.
Cut into 9 pieces & enjoy!

    if you spray a muffin tin with cooking oil it makes 12 mini quiche and they freeze well. then reheat for weekday breakfasts in the microwave. i have a similar recipe that i prepare that way. - 3/28/10

    This was so amazing I used frozen spinach and a whole package of baby bellas. I also cooked it in muffin tins and got 16 servings instead of 9 with only 129 calories per mini quiche. this took a little time to prepare but it was well worth it! going to freeze the portions for quick breakfasts! - 4/19/10

    Awesome and easy!! I used 5 eggs instead of eggs and eggbeaters (because I didn't have any eggbeaters). I used chanterelle mushrooms. This recipe could easily be adapted to include brocolli, asparagus, etc. - 4/19/10

    I served this to company and they loved it! It so easy, makes a ton, and is so tasty. I used turkey bacon instead of the Morningstar. Could use sausage instead. Definitely going to make again!!! - 11/8/10

    Delicious! Made this for Easter brunch. I will definately make it again. I used 5 eggs instead of egg beaters also. I skipped the mushrooms and seasoned salt and added extra spinach and 3 pieces of bacon, instead of 2. Yummy! - 4/25/11
