Delicious! Made this for Easter brunch. I will definately make it again. I used 5 eggs instead of egg beaters also. I skipped the mushrooms and seasoned salt and added extra spinach and 3 pieces of bacon, instead of 2. Yummy!
This was so amazing I used frozen spinach and a whole package of baby bellas. I also cooked it in muffin tins and got 16 servings instead of 9 with only 129 calories per mini quiche. this took a little time to prepare but it was well worth it! going to freeze the portions for quick breakfasts!
