Barbequed Pulled Chicken

1# cooked chicken breast, shredded with a fork1 tsp. olive oil2 tsp. minced garlic3/4 cup ketchup2 tsp. mustard2 tsp. vinegar1 tsp. sugar2 T. water
In a non-stick skillet, heat olive oil over medium high heat. Add garlic and saute for 1 minute. Add chicken and stir to combine garlic. Saute for 3 minutes to heat through.
In a small bowl combine the ketchup, mustard, vinegar, sugar and water. Pour over chicken and mix well. Turn heat to low and let simmer for 10 minutes, stirring occasionally.
Makes 10 - 1/4 cup servings.
Use a high fiber, low calorie roll or bread to make a delicious sandwhich. My family eats these hot and cold. Enjoy!

I'll have to carefully measure, or tweak with other ingredients because it really mostly tastes like mustard and ketchup mixed with chicken...meh. - 4/9/10

hmmm, did you let it simmer for a bit? The vinegar and sugar give it the tang it usually needs.

Absolutely! Though I've not tried turkey, I substitute turkey for a lot of things so should work just fine.
