Ingredients
1.5 cups Black beans, drained and rinsed (1 can)2 cups canned corn, drainedBell Peppers, combination of red, green and yellow is best, use 1/3 each3 green onions, sliced2 Tbs. chopped Cilantro2 small Serrano peppers, finely chopped1 Tbs. olive oil2 Tbs. Red wine vinegar1.5 tsp. lemon juice.25 tsp kosher salt.12 tsp, red pepper flakes.5 tsp ground coriander.5 tsp. cuminServes 5, per serving: 162 calories,, 3.9 gms fat, 26.8 gms carbs, 6.7 gm protein
Directions
Seed and finely dice the Serrano pepper. Use protection for your hands and keep hands away from eyes. Dice the peppers. Combine with beans and corn. Whisk dressing in a bowl. Stir dressing into salad ingredients and refrigerate to blend flavors, stirring occasionally. Make ahead several days for the flavors to meld. Total recipe serves 5.
