Kick-Start Soup

Ingredients
1kg carrots3 large tomatoes4 celery stalks with leaves3 red or green bell peppers1 bunch crispy spring onions1 clove garlicHerbs of your choice, such as basil, parsley or corianderPepper, to taste2 salt-reduced chicken or vegetable stock cubes2 x 400g cans diced/crushed tomatoes1 x 400g can of Four Bean Mix
Directions
1. Clean and finely chop carrots, tomatoes, celery, peppers, spring onions and garlic.

2. Place vegetables in a large pot and add herbs and pepper to taste.

3. Dissolve stock cubes in a litre of water and pour over vegs. Bring to the boil, then simmer for 20 minutes, or until vegs are tender. Add diced/crushed tomatoes and beans. Stir. Continue to simmer.

4. Add more water and herbs and spices as needed. Serve.

Makes 9 1-cup servings.
