Cover and soak 2 cups raw cashew pieces for 1-4 hr. Pour undrained nuts into Vitamix or food processer. Add 1/2 red sweet pepper, 1 T salt, 1 T onion powder, and 2 T nutritional yeast flakes. Process until smooth.
This can be used in place of dairy cheese sauce over steamed veggies, in lasagna, or on nachoes...
