Curried Lentil/Vegetable Soup with Ham (1 1/2 c)

Ingredients
2 T olive oil1 1/2 c chopped carrots2 c chopped celery2 c chopped onion2 cloves garlic, minced2 c dried red lentils3 c chicken stock300 g lean ham7 c waterthyme, salt, pepper, to taste2 t curry powder
Directions
Saute veg in olive oil. Add rest of ingredients and simmer until lentils are tender. Season to taste. Makes 10 1 1/2 c servings.
