Crock Pot Chinese Pot Roast

Ingredients
2 # eye of round roast, fat trimmed1/2 cup reduced salt soy sauce1/2 cup water1 tsp ground ginger3 cups steamed Minute Rice4 cups of Bird's Eye Oriental Stir-Fry Vegetables with sauce
Directions
Place roast (and chopped onions, optional) in crock pot. Combine soy sauce, water and ginger. Pour over meat. Cook on LOW for 6-7 hours. Slice roast and serve with steamed stir-fry vegies and rice.
