Salsa Salad

Ingredients
1 can of black beans, rinsed, or 2 c. fresh-cooked2 small or one large red onion, diced1 large green or yellow pepper, diced1 small summer squash, diced1 large cucumber, peeled and diced3 medium tomatoes, diced2 tbsp. olive oil1 tbsp. lemon juice4 tbsp Lawry's Caribbean Jerk marinade1/4 c. fresh cilantro, coarsely chopped
Directions
Rinse beans well, and drain. Dice vegetables, add cilantro, oil, lemon juice and marinade, and toss. Chill for 1 hour or more. Makes approximately 12 1-c servings, dependent on the sizes of the veggies.
