Carmelized Onion and Grapefruit Salad

Ingredients
Caremlized Onions:3 tbsp olive oil2 onions, very thinly sliced1 tbsp balsamic vinegar1/4 tsp salt1/4 tsp pepperDressing:2 tbsp red wine vinegar2 tbsp fresh lemon juice1 tsp hone1/4 cup extra-virgin olive oilsalt and pepper to tasteSalad:2 pink grapefruits1 head romaine lettuce1 large fennel bulb, trimmed and thinly sliced1 small cucumber, peeled, seeded and thinly sliced4 scallions, finley chopped1 tbsp chopped fresh thyme
Directions
Carmelize onions - let cool.

Mix together salad ingredients. Add dressing. Place onions on top and toss.

    We just used the part of the recipe to carmelize some onions since I'd never done it before and it worked pretty well! Ours got a little burnt, I guess you have to stir it carefully and keep the heat not too high. Thanks for the instructions! - 5/8/10
