Womans World Turbo Soup

Ingredients
1 T olive oil2 medium onions, diced2 large sweet potatoes with skin,scrubbed, diced into 1/4" cubes3 (15 oz each) cans black or kidney beans, drained1/3 t. dried orgeano ( 1t. finely chopped fresh) of to taste2 cartons (32 oz.) cartons low sodium vegetable or chicken broth2t. Sea salt or to taste1t. ground cumin1t. freshly ground black pepper or to taste16 Cups (1lb.) fresh baby spinach8 cups chopped kale or other leafy green2 c. soybeans (edamame) or roasted chicken breastDiced bell pepper1T Parmesan Cheese (optional)
Directions
Heat oil in a large pot over a medium high heat. Saute onions ,5 min. Stir in remaining ingredents, except bell pepper; bring to a boil.
Reduce heat and lightly boil until sweet potatoes are soft, 12-15 minutes.
Adjust seasongs. Makes 8 3 cup servings or 12 2 cup servings .
