Vegan Chickpea Delight

Ingredients
Directions
1 can chickpeas1 onion1 pepper (any color)1 large can stewed tomatoes or fresh diced0.5 small can tomato paste1 portabello mushroom cap2 cups fresh spinachspices/seasonings
-Wash & cut up all the veggies (except spinach)
-Drain & rince chickpeas
-Drain some of the liquid from the stewed tomatos
Add above ingredients to a non stick pan
-Cook until veggies are almost done, then add half a small can of tomato paste
-Season with whatever you would like, salt, pepper, garlic powder, onion powder, paprika, basil
-In the last minute, add the spinach and stir until it starts to wilt.
Serve right away.
Alternative:This dish is also great with using lentils in place of chickpeas, or add both but keep in mind to recalculate the nutritonal facts if you do.
Makes 4 servings... I didn't measure but it looks to be about 1.5 cups or so each..
