apple raisin breakfast muffins

Ingredients
1 c. old fashioned oats1 cup nonfat milk1 c. whole wheat flour1/2 c. brown sugar1/2 c. applesuce2 egg whites1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1+1/2 tsp cinnamon1/2 tsp sugar1/2 c raisins1 shredded granny smith apple
Directions
soak oats in milk 1 hour
preheat oven to 400. spray muffin tins
combine oat mixture with applesauce and eggs and apples add wet ingredients to dry ingredients and mix until just combined. add raisins
combines 1/2 tsp cinnamon and 1/2 tsp sugar in seperate bowl.
spoon batter equally into 12 muffin tin. sprinkle evenly with cinnamon sugar mix.
bake for 20-25 min. or until done.
can be frozen and reheated in microwave.
12 muffins.
