Welshans' Family Sour Cream & Potatoes

Ingredients
1 lb. lean ground beef1/4 cup light butter (optional)*3 lbs. potatoes, peeled, cubed bite-size1 16 oz. container fat-free sour cream4 cups buttermilksalt to tastepepper to taste*this added for my person taste preferences, it is not part of the original recipe
Directions
Brown beef in large pot or dutch oven. Season to taste with salt, pepper, and/or any addition spices of your preference. Add butter(optional) and potatoes. Cook covered over medium heat until potatoes are slightly tender but not browned, about 20-30 minutes. Stir constantly to avoid sticking. Add sourcream and stir until even distributed. Stir in buttermilk. Bring to a low boil over medium-high heat for about 10 minutes. Reduce temperture to medium-low cover and cook, stiring constantly to avoid sticking. Reduce heat every 15 minutes until desired tenderness is reached. Uncover, and reduce heat to a simmer until desired thickens is reached. Will continue to thicken as it cools. Add salt to taste before serving.
