Robyn's Mexican Rice

Ingredients
1 Cup uncooked rice2 Cups water1 Can Diced Tomatoes1 Cup Cheese Blend (Provolone, Mozzarella)2 Tsp Taco Seasoning1/4 C Enchilada Sauce
Directions
Boil 2 C water with 1 C rice and 1 can diced tomatoes to make 2 cups rice.
Add Cheese, Taco Seasoning, and Enchilada Sauce. Mix well and serve warm.

Makes 6 1/2-C servings.
