The "Other" Mac-n-Chez

Ingredients
2-1/4 c. Whole Wheat Elbow MacaroniOlive Oil1/4 c. Whole Wheat Flour1/4 tsp. salt1 c. skim milk3 oz. low fat Swiss Cheese, shredded5 oz. low fat Cheddar Cheese, shredded1 Tbl. whole wheat Panko Breadcrumbs2 Tbl. low fat Parmesan Cheese
Directions
Cook Noodles according to package directions. Preheat over to 375. Lightly grease a 1-1/2 qt. casserole dish w/ olive oil. Add floour & salt to medium bowl & whisk in enough milk to make a paste. Whish in remaining milk until no lumps remain. Place a medium saucepan over med. heat & add flour milk/mixture. When milk is warm, add Swiss cheese & stir until melted. Add Chedder cheese & stir until melted & mixture begins to thicken. Stir in cooked macaroni & transfer to casserole dish. In a small bowl, stir together breadcrumb & Parmesan. Sprinkle over macaroni. Bake 15-20 min. or until top is lightly browned. Allow to stand 5 min. before serving. Makes about 6-1/2 c. Serves 6
