.5 cup egg beaters2 LaTortilla Factory Low Carb Garlic & Herb Tortilla Shells2 Tbl Weight Watchers Shredded Mexican Blend4 Tbl SalsaCooking Spray
In a small frying pan, spray cooking spray and heat up a minute or 2 before adding the egg beaters. While the eggs are heating up, lay the tortilla shells on a plate put 2 tbl of the salsa on each shell. Finish cooking the eggs/ scrambling them. Take 1/2 of the scrambled egg whites and place on each of the shells on top of the salsa. Then put 1 tbl of the cheese on the scrambled eggs.
I usually then put it in the microwave for 20 seconds to warm the burrito, salsa and melt the cheese some more. When it comes out of the microwave, I then fold them into burritos.
