Persian Greens, Herbs and Eggs - Kookoo Sabzee

Ingredients
Ingredients:1 LeeksSwiss Chard, 1 cup, chopped Beet greens, fresh, 10 leaf Turmeric, ground, 1 tsp Salt, 1 tsp Egg, fresh, 5 large Whole Wheat Flour, 2 TBSPSafflower Oil, 2.5 tbsp
Directions
Chop greens and leeks thinly
Add salt, eggs, four and turmeric.
Pour half of oil in bottom of pan, high heat.
When oil is hot, pour in mixture.
Flatten in pan to about an inch, cover, turn down heat until eggs set (about 10 minutes)
Cut into wedges in pan, take out and add remaining oil to pan.
Return wedges upside down to fry crisp the other side - high heat for 5 minutes.
Servings are about 2 inches square.
