Black Bean Sweet Potato Soup

Ingredients
1 can black beans, rinsed1 can Rotel Tomatoes with Lime & Cilantro2 cloves garlic, mincedsmall amount onion, diced1 T olive oil2 medium sweet potatoes, cook to almost soft, big chunks1 can chicken broth, reduced sodium, fat-free
Directions
saute garlic & onion in olive oil
add rotel and black beans and chicken broth
simmer till heated through
add sweet potato chunks
simmer till heated through
stir to break down parts of sweet potato, this will add thickness to the soup.
