Gluten Free Sugar Free Oatmeal Applesauce Muffins

Ingredients
1 c. gluten-free oats1 c. applesauce, unsweetened1 lg. egg, beaten2 tbsp. plus 1 tsp. vegetable oil1 tsp. baking powder1/2 tsp. baking soda1 tsp. cinnamon1/2 c. apple juice, unsweetened1 c. gluten-free oat flour (try Bob's Red Mill)raisins or cranberries (optional)
Directions
Spray muffin cups with Pam or use muffin liners.

Preheat oven to 375°F degrees.

Stir together the oatmeal, applesauce, juice, egg, and oil. Set aside.

In another bowl, stir together the flour, baking powder, baking soda and cinnamon. Make a well in the center, and add the applesauce mixture. Stir until well combined, but do not over beat.

Add raisins or cranberries if desired. Pour into the muffin tin until about 2/3 full.

Bake 15-20 minutes, or until a toothpick inserted in the middle comes out clean.

Let the muffins cool in the pan for 5 minutes, then remove to a rack to fully cool.

Makes 12 muffins.

    These muffins were very moist but I found them bland. My husband really enjoyed them but did say they were a bit bland. If I make them again, I would add raisins, more cinnamon and maybe some nuts. - 9/26/11

    As a Brit I find cups tricky (for internet recipes why not add metric equivalents for non-US users?) but persevered: made my own apple sauce + oat flour (pulse GF oats) and added 60g dried cranberries, 30g sultanas. So worth it. Moist and nicely/naturally sweet for approx 24 more kcals (so 136 each) - 3/4/16
