Tofu, Medium Firm- half of one package, diced0.25 C- Celery, diced0.25 C- Carrots, diced0.25 C- Red Onion, diced2 cloves of Garlic, chopped7- Kalamata Olives, chopped1- Sun-Dried Tomato in Water, chopped1 t Walnut Oil2 T Balsalmic Vinegar0.5 T Dijon Mustardsalt, pepper, crushed red chili flakes if desired
Directions
Combine all ingredients and mix well.
