Easy Basic Chicken Noodle Soup

1 tablespoon vegetable oil1 bag baby or sliced carrots7-8 stalks celery1 large onion 12 cups hot water1/4 cup Better than Boullion chicken base1 small or 1/2 large rotisserie chicken6 oz uncooked Barilla multigrain pasta
Heat oil in dutch oven on medium heat. Meanwhile, cut up carrots, onion, and celery in bite sized pieces. Sautee vegetables until soft, about 10 minutes. Mix hot water with chicken base, and add to pot. Bring to a boil, then turn down to simmer. Meanwhile, remove meat and hand shred into bite sized pieces, avoiding fat and skin, adding to pot. After soup boils, add pasta. If you use spaghetti or angel hair break up into smaller pieces. Cook another 10-15 minutes after pasta is added. Can be simmered long if desired.
