Chicken Stirfry

Ingredients
20oz boneless skinless chicken breast (diced)1 cup carrots (chopped)1 cup celery (chopped)1/2 cup bok choy (chopped)1/2 cup red onion (chopped)1/2 cup soy sauce2 Tbsp fish sauce2 Tbsp olive oil3 tsp minced garlic2 tsp ground ginger
Directions
In large pan or wok combine oil, ginger, and garlic. Next add chicken and cook until nearly done. Next add in soy sauce, fish sauce, and chopped carrots and cover. Cook approximately 2-4 minutes and then add in celery and onion. Cook for another 2-4 minutes and toss bok choy on top. Cover and remove from heat. Let sit for 2 minutes then toss and serve.
