Coconut LIme and Black Bean Rice

Ingredients
1 cup sweetened coconut1.25 cups basmati rice uncooked1.25 cups chicken broth2 15 ounce cans black beans, rinsed and drained1 poblano chile2 tsp chili powder1 tsp cumin1 limecilantro1/4 tsp salt1/4 tsp pepper1 small onion3 tbs butter dividedjalapenos and mango for topping
Directions
Preheat oven to 350
Spread in even layer 1 cup coconut on cookie sheet and toast coconut, approx 10 minutes, remove and cool
In saucepan add 1 cup water, chicken broth and 2 tbs butter in 2 q pan, bring to boil, add salt, pepper then add rice and cook 20 mins or until done
In saucepan melt remaining 1 tbsp butter, add diced onion and poblano, over med high heat cook for 5 minutes, add beans and spices and 3/4 cup water, cooking for approximately 15 minutes
zest lime, then juice in separate bowl
when rice is done, add lime zest, lime juice and coconut, stir to mix, add cilantro to taste (recipe calls for 1/2 cup but I love cilantro so I generally add the entire bunch), once rice is mixed put bean mixture on top and serve, I added jalapenos and diced mago before serving
