White Lily Southern Cornbread muffins

Ingredients
2 cups White Lily Self-Rising Buttermilk Cornmeal Mix1-1/2 cups buttermilk1/4 cup Vegetable oil1 large egg
Directions
Heat oven to 425F. Combine all ingredients stirring until moistened (batter will be slightly lumpy). Spray 12 cup muffin pan with non-stick cooking spray. Pour batter into prepared pans 2/3 full. Bake 20-25 minutes. Makes 12 muffins.
