Cranberry Lemon Couscous

Ingredients
2 cups cooked couscous1/4 cup of cooked spinach, finely minced1/4 cup shredded carrots1/3 cup dried cranberries3 Tbsp minced fresh chives2 Tbsps minced fresh parsley1/4 cup chopped green peppers1/4 cup crumbled feta cheeseFor dressing:1/2 tsp sugar 2 tsps dijon mustard4 Tbsp olive oil4 Tbsps red wine vinegar
Directions
Toss salad ingredients together.

Shake dressing ingredients together in a jar and pour over salad. Toss lightly to combine and moisten couscous blend. Either serve room temperature or chilled.
