RB Dietetics Stuffed Bell Pepper

6 bell peppers (prefer red, but green or yellow will work)2 tsp sea salt or table salt2 tsp black pepper4 garlic cloves, chopped16 oz raw ground beef, extra lean1.5 cup brown rice, prepared
1. Cut the top off of the bell pepper. Try to cut right under the stem. Take out the middle and rinse the inside and outside of the pepper. Set aside.
2. Spray skillet with pan spray (such as PAM).
3. Add salt, pepper and chopped garlic.
4. Brown the ground beef. Once browned, set aside.
5. Prepare the brown rice as directed.
6. Preheat the oven to 400 Degrees.
7. Mix together the ground beef and rice.
8. Pack the beef & rice mix into the pepper.
9. Place in the oven and bake uncovered for 20- 25 minutes (or until bell pepper have softed a bit).
