Ground Turkey and Veggie Medley over Brown Rice

Ingredients
Lean White Ground Turkey meat, Trader Joe's Brown Rice, Organic Frozen, Trader Joe's Diced Tomato's, canned, no salt added, Trader Joe'sLite Sour CreamHot fresh Salsa, Trader Joe's3 Cheese blend shredded cheese, Trader Joe's Succotash, frozen, Trader Joe's
Directions
- Brown turkey in skillet on medium high, approx 8 - 10 minutes
- Add can of diced tomato's to skillet
- Let turkey and tomatos simmer for 2 - 3 minutes
- microwave frozen succotash for 2 minutes and add to skillet
- Let skillet simmer 2 - minutes
- Microwave frozen brown rice for three minutes
- Once rice is cooked, portion 1.5 cup onto plate
- Portion 1.5 cup of tukey and veggie medley over rice
- If desired, add lite sour cream, cheese and salsa to taste

Serving makes 2 - 1 cup servings
