Mexican Chicken Casserole Mexican Chicken Casserole
Number of Servings: 10

Ingredients

    6 Small Chicken breast, cooked deboned ( save broth)
    1(8oz) pkg Fat Free Totillas Save one for top
    1 Medium onion chopped fine
    1 can Ro-Tel tomatoes
    1 c grated low fat cheddar cheese
    2 cans low fat cream of chicken soup
    1 tsp garlic powder
    1 tsp chili powder
    pepper to taste

Directions

Dip tortillas in broth for 5 minutes. Spray a 9 X 13 pan. Layer tortillas. Mix all ingredients, except cheese and tortillas. Pour mixture over tortillas and top with cheese and crumble tortillas. Bake at 350 for 30 to 35 minutes.

    This was awesome and the family finished it all in one night. Mine was not soggy at all because I only used 1 can of chicken soup and simmered it down. I also drained the tomatoes. I did not have any rotel, so I used a can of italian diced tomatoes and added cumin to it. - 9/2/09

    Question: is there just one layer, or two, separated by a layer or tortillas...like a lasange? - 11/22/08

    My family loved this dinner! One of my boys actually had 2 helpings.. that is very unusual at our house. I jsut need to tone down the spice so probably won't put as much chili powder in it. Kids said it was a keeper! - 1/18/09

    Instead opf the tortillas I used ww penne pasta and added a can of ro-tel.....YUM and very filling! - 3/20/09
