Quinoa Salad

1 C dry quinoapinch sea salt1/2 bunch arugula1/2 C carrots, chopped1/3 C parsley, minced (or 2 T dried)Dressing:2-3 cloves garlic, minced1/4 C lemon juice2 T olive oil2 T tamari (or soy sauce)
Rinse quinoa well with warm water and drain. Place rinsed quinoa, salt and water in a pot. Bring to a boil, reduce heat to low and cover, let simmer for 15-20 minutes, until all the water is absorbed. Fluff into large salad bowl and allow to cool.
Prepare vegetables and dressing. Combine garlic, lemon juice, oil and tamari; pour over quinoa and toss well. Wash and dry arugula leaves and chop into bite size pieces. Add arugula, carrots, and parsley to quinoa. Toss gently. Serve at room temp or chilled
