Banana Chocolate Chip Muffins

3/4 cup Old Fashioned Oatmeal1 cup whole wheat flour1/4 cup ground flaxseed meal2 tsp baking powder1 tsp baking soda6 squares Lindt 70% cocoa chocolate, chopped3 ripe bananas (mashed), or enough for 1.5 cups1/2 cup unsweetened apple sauce1/2 cup melted Becel Olive Oil Margarine1/4 cup skin milk2 eggs (or use egg substitute)
Preheat oven to 350 degrees. Grease 12 muffins tins with non-stick spray. Combine Flour, oatmeal, flaxseed, baking powder, baking soda and chopped chocolate in a medium bowl. Set aside.
In a small bowl, combine bananas. applesauce, becel, milk, eggs. Add to dry ingredients and stir just until moistened.
Bake 25 minutes until golden and toothpick inserted in center comes out clean. Set on rack to cool for 5 minutes before removing from tin.
Set them back away from the edge of the counter to cool, so your dog does not eat them...that may have happened to me! :)
Makes 12 good sized muffins. These freeze well!
