1 cup fresh cabbage - shredded1 cup french beans - sliced1 cup carrots - sliced1 cup cauliflower1 cup bean sprouts1 medium-sized potato - boiled1/4 cucumber - sliced1 hard-boiled egg sliced5 oz peanut sauce2 tbsp crispy-fried onionsprawn crackers - optional
Boil the potato. Allow potato to cool, the remove the skin and cut into slices. Slice cucumber and the hard-boiled egg. Clean and prepare the vegetables. Shred the cabbage, slice the beans and carrots, break the cauliflower into florets. Boil the veggies separately; cabbage, beans, carrots, cauliflower for 3-4 minutes. beansprouts for 2 minutes and potato for 15 minutes. (Can also serve veggies raw)
To serve: arrange the beansprouts in the middle of a serving plate, surrround with cabbage, beans carrots and cauliflower. Top with slices of potato and egg. Pour peanut sauce over salad and garnish with onions and prawn crackers.
