(keep your eyes open for sodium-reduced alternatives), it remains a staple comfort food at our house.

Ingredients

    2 cups vegetable broth
    1 Tbsp Wakame (seaweed) finely chopped
    2 Tbsp water
    1/2 c. soft tofu
    4 Tbsp chopped scallions
    1 Tbsp miso paste

Directions

makes 2 1-cup servings

--finely chop wakame and place in a small bowl.... use a few tablespoons of water, just enough to cover the seaweed and set aside
--chop tofu into small cubes and set aside
--chop scallions and set aside
--bring broth to almost boil and reduce heat
--place miso in a measuring cup. ladle a few tablespoons of broth and mix the miso with the broth until smooth.
--add smooth miso paste, wakame (with it's water), tofu and scallions to the broth.
--serve in your favourite small bowl and enjoy!

    I love miso however I made mine the traditional way without chicken broth. I make this for breakfast (minus the broth) and add corn, green beans, edamame and so on. Makes a powerful soup for breakfast! - 3/20/09

    This is an outstanding soup. I omitted the tofu -- as I didn't have any-- and added mushrooms (my favorite), and I think I could eat this at every meal, if given the opportunity. Very simple and delicious. Thank you! - 11/27/08
