Number of Servings: 12

Ingredients

    2 cups linguine noodles, cooked, rinsed, and cooled

    1/2 to 1 head sliced Napa cabbage
    1/2 to 1 head sliced purple cabbage
    1/2 to 1 bag baby spinach
    1 red bell pepper, sliced thin
    1 yellow bell pepper, sliced thin
    1 orange bell pepper, sliced thin
    1 cup bean sprouts (also called “mung bean sprouts”)
    3 sliced scallions
    3 peeled, sliced cucumbers
    LOTS of chopped cilantro— one bunch

    DRESSING:

    Juice of 1 lime
    8 tablespoons olive oil
    2 tablespoons sesame oil
    6 tablespoons soy sauce
    1/3 cup brown sugar
    3 tablespoons fresh ginger, chopped
    2 cloves chopped garlic
    1 serrano pepper, chopped-seeds and veins removed



Directions

Mix together salad ingredients. Whisk together dressing ingredients and pour over salad. Mix with tongs and serve on platter.

    I love this! I made it by the recipe the first time and it was great. I tweaked it the 2nd time by replacing 2 tablespoons of the olive oil the same amount of rice vinegar and topping it with seared sesame-encrusted ahi tuna. Yummmmm. - 8/25/08

    SO GOOD! We had it as a side dish to an asian main dish and then ate the leftovers with Imitation Crab as the main course for lunch. I only used 1/2 the recommended veggies and it still filled my largest salad bowl. - 1/16/19
