Salmon cakes

Ingredients
1 can salmon1 med egg1 tbsp light miracle whip1/8 c. crushed saltines1/8 c. chopped celery1/8 c. chopped onion1/8 c. canola oil for frying
Directions
I remove the skin and spine from a large can of salmon (even though my mother says that it is not necessary - I do it anyway)
combine salmon (may substitute tuna use two small cans)
egg, miracle whip (or light mayo), chopped celery, chopped onion and a little of the cracker crumbs to bind it together. Form into 4 equal patties, fry in canola oil until golden brown.
