Peanut Butter Sauce Pasta

Ingredients
1/3 c. peanut butter3 Tbsp. soy sauce3 Tbsp. vinegar2 skinless chicken breasts2 cups vegetables8-12 oz. whole wheat pasta (depends on what kind you use and how much you want!)
Directions
Chop chicken breasts into cubes and steam.
Boil noodles according to package instructions. Chop vegetables and cook with the noodles.
In a small bowl, mix peanut butter, soy sauce, and vinegar with a hand-held electric mixer. Set aside.

Toss the chicken, veggies, noodles, and sauce together. Make sure you mix it thoroughly or the chicken and veggies will all sink to the bottom.

Makes about 5 1.5 cup servings.
