Chicken over Angel Hair Pasta

1 lb Skinless Boneless Chicken Breast (Diced)2 6 oz jars of Marinated Artichoke1/2 cup sundried tomatos (chopped)1 Red Bell Pepper1/2 lb Angel Hair Pasta1/2 cup white wine (can sub chicken broth)
Prior to beginning the recipe roast your red pepper (or used jarred but don't forget about the added salt!) Place the pepper on an open gas flame and roast, turning them frequently with tongs, until all sides are charred black, 7 to 10 minutes. (Alternately, the pepper can be roasted under a broiler, or on top of a gas or charcoal grill.) Place the blackened pepper in a plastic or paper bag, and let rest until cool enough to handle, about 15 minutes. Peel the pepper, remove the seeds and stems, and coarsely chop.
Heat skillet on med heat until hot. Boil water for pasta.
Cut chicken into bite sized peices and sprinkle with salt and pepper.
Add marinade from artichokes to your hot pan and cook chicken pieces 6-7 min until cooked through.
Add artichokes, red pepper strips, tomato and wine- heat through.
Cook pasta and serve.
Serves 4!
