Mixed Grain Griddlecakes

1/2 cup cornmeal1/4 cup whole wheat flour2 tablespoons wheat germ2 tablespoons soy flour2 tablespoons flaxseed meal2 1/2 teaspoons baking powder1/4 teaspoon salt1 1/4 cups soy milk1 teaspoon maple syrup1 teaspoon canola oil1 banana, sliced--optional
Combine the dry ingredients in a mixing bowl. Add the milk, maple syrup, and oil. Stir until the dry ingredients are completely moistened. Let stand a few minutes, until the batter absorbs liquid and thickens. Stir in the fruit, if desired.
Pour the batter by generous 1/4 cupfuls onto a hot oiled or nonstick griddle. Cook until the bottom is golden. Turn and cook the other side.
Makes 6 pancakes; 2 servings.
* For a delicious and lowfat topping, mix equal parts nonfat plain yogurt with maple syrup.
