Green Bean and Carrot Quick Curry

Ingredients
1 medium onion, diced1 large carrot, sliced in rounds1 can green beans (or 2 cups frozen or fresh)2 TBSP Olive Oil2 TBSP Indian Curry Paste1 Tsp Cumin seeds or black mustard Seeds1 C Water
Directions
Add Olive Oil to pan on Medium High. When Oil is heated, add Mustard or Cumin seeds and cook for about 30 seconds. Add onions and cook, stirring until onions become soft and slightly translucent. Add Carrots and cook additional 2 minutes stirring frequently. Add Curry paste and stir to combine and cook paste for 1 minute. Add Green beans and water. Cover and let simmer for 15 to 20 minutes (or until your rice is done).
