Ingredients
1 can chickpeas drained and rinsed3T minced onion, red or white1-2 baby dill pickles chopped1 1/2 Tbsp Wildwood Garlic aioli or other vegan mayo like Vegenaise
Directions
Mash the chickpeas with a potato masher. Stir in minced onion, chopped pickles and aioli. Salt and pepper to taste if desired.

Stuff a pita, have as a salad. Easy, filling and totally yummy!

    My kids and I really liked this. I had it in a tortilla w/shredded lettuce & grated carrots. The kids had it on whole wheat bread w/mustard. I added a little pepper and 1/2 tsp. minced garlic. Perhaps some cumin or stone ground mustard in it next time. - 12/11/07
