Beer chili

Ingredients
8 oz beef (filet or other very lean beef), cut into 1/2 inch pieces1 can each black beans and corn, drained and rinsed2 cans kidney beans, drained and rinsed2 tsp olive oil2 cloves garlic, minced1/4 red onion, diced1/2 cup tomato paste1 can light beer, like Miller light2 cans water1 chipotle pepper, chopped
Directions
Saute garlic and onions. Add beef and brown. Add tomato paste and chipotle pepper. Stir and saute. Add can of beer. As it simmers, add beans and corn, then add water. Bring to boil, then drop to a simmer and continue cooking.

Makes 8 1-cup servings.
