Carob Chip Cookies

Ingredients
1/3 cup of walnut oil (can substitute a different oil or 1/3 cup applesauce) 1/2 cup of pure maple syrup (I used 1 teaspoon of Stevia instead. Nutrition info is for Stevia)1 teaspoon vanilla extract1 organic egg¾ cup of brown rice flour1 teaspoon baking soda1/2 cup of carob chips unsweetenedDash of all-spice optional
Directions
Grease two baking sheets and preheat oven to 375° F. In a medium size bowl, combine the oil, maple syrup, and vanilla. Beat the egg and stir into the oil mixture. Gradually stir in flour and baking soda to form a stiff batter. Fold in carob chips and drop the batter into the baking sheets by teaspoons. Bake for 10-15 minutes until cookies are lightly brown. Remove from the oven and cool. Serve with almond or rice milk.

    So excited to find a cookie recipe that is ok for phase 3 of the HCG protocol. I did make a few changes...
    I used Applesauce for "oil", 8 drops of liquid Stevia for sweetener, and replaced the flour with Almond Meal. 12 cookies=69.3 Calories each - 7/11/11

    These cookies are a great treat when you really want a cookie. I found they are too moist for storage in my cookie jar but I can live with that. I am going to try them using applesauce to cut calories and make them as bar cookies. Should work really well that way. *S*
