Cabbage Salad with raisins and cranberries

Ingredients
Half a head of shredded cabbage1 grated carrot1/4 cup raisins2 Tablespoons dried cranberries1/4 cup snow peas (about 10) cut into pieces1 tbsp. balsamic vinegar1 tbsp cider vinegar2 tablespoons brown sugar1 oz. orange juice (about 2 tablespoons)1 chopped scallion1 tablespoon olive oil
Directions
Shred or chop cabbage, grate carrot, cut up scallion and snow peas.
In a measuring cup, mix brown sugar, vinegar, raisins, cranberries, olive oil and orange juice to soften the dried fruits for a few minutes.
Pour over the cabbage mixture and stir. Add salt and pepper to taste.
Serves 6

    I'm never sure about how much "half a head" of cabbage should be. I used a whole small head which came to about 6 cups shredded fine. There was enough of the dressing to coat it well. A very tasty and satisfying salad! - 7/10/10
