Taco Bowl

Ingredients
* Ground beef, lean 1.15lb * Diced Canned Tomatoes 1 can * Beans, black, 1 can rinsed * *Cheese, Kraft Mexican Style Taco Cheese 1 bag * *Peppers, sweet, red, yellow, orange, fresh, 2 cups chopped total * *Whole Wheat Tortilla 6 * Iceberg Lettuce (salad), 3 cup, shredded or chopped 1 tsp cayenne pepper1 tsp ground cumin1 tsp chili powder
Directions
Makes about 4 servings

Preheat oven to 350 degrees

Spray non stick pan with veg oil spray, then brown lean ground beef on medium heat until completely cooked, and drain the fat.

Add can of diced tomatoes, I used chipotle diced tomatoes.

Sprinkle spices to your taste, my measurements are approximate, i just sprinkle and taste, I don't measure.

Let meat tomatoes and spices simmer for 3 mins then switch to low.

Roll a sheet of foil into a ball and place on a baking sheet, place whole wheat tortilla over ball and bake for 5 mins or until tortilla gets hard but not browned.

Turn over baked tortillas and in each tortilla spoon in meat with tomatoes about 1/2 cup, sprinkle beans, and peppers. Top with cheese and place back in the oven until cheese melts. Add 1/4 cup shredded lettuce before eating. There are lots of other things you can add to this recipe such as hot peppers, onions, olives, corn, etc. Tortillas are eaten by breaking the bowls apart and eating with a fork or your hands.

I made this as a new way to serve leftovers from a soft taco dinner the night before. No new ingredients needed, just presented a different way.
